How do beads move between the rings?

Only through the two shared crossing beads. Rotating one ring shifts those shared beads into the other ring, which is what lets you sort them.

Is this like a Rubik style puzzle?

It shares DNA with Hungarian Rings — two interlocked loops you rotate to sort. It is pure logic, no luck.

Can I undo a rotation?
